Low carb Cabbage chicken soup


  • 2 large red onions diced
  • 2 medium cloves minced garlic
  • 2 teaspoon teaspoon black pepper
  • 6 cups chicken broth low sodium
  • 1 lb ground chicken
  • 1 can mild Ro-tel tomatoes
  • 1 pack Italian seasoning
  • 2 bell peppers
  • 1/2 teaspoon kosher salt
  • 1 bunch bunch celery chopped
  • 2 cups chopped cabbage
  • 1 cup broccoli florets
  • 3 meduim carrots chopped
  • 2 tbsp dried dill
  • 1 tbsp olive oil


  • In a large pot add olive oil and onion and cook till onion is transparent then add garlic and chicken for about 5min
  • Then add Tomatoes, Seasoning, salt to taste, dill, black pepper, and broth bring to a boil and
    simmer for about 20mins.
  • Then add vegetables and cook for 5 to 7mins
  • Garnish and serve or allow to cool and freeze for later

You can also make this soup in a slow cooker. All you need is to follow the first step and add the remaining ingredients except the vegetables.

When it is almost ready, add the vegetables for about 5 to 10mins.

The purpose of this soup is to make sure the vegetables are not overcooked so you can enjoy more of the nutrients.
